Applesauce, Bran and Oatmeal Muffins

I wanted to make healthy muffins to have for breakfasts this week. I like apple muffins, so I thought this recipe from Cooking Light sounded perfect. The recipe calls for wheat bran, which is high in both fiber and iron (according to nutritiondata.com).


Applesauce, Bran and Oatmeal Mufins

Ingredients
1 1/4 cups all-purpose flour

1 cup quick-cooking oats

3/4 cup wheat bran

1/2 cup packed brown sugar

1 teaspoon baking powder

1 teaspoon ground cinnamon

3/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup raisins

1 cup applesauce
(I used unsweetened)
1/2 cup milk

1 tablespoon vegetable oil

1 tablespoon corn syrup
(I used honey)
1 egg


Directions


Combine flour and the next 7 ingredients in a medium bowl. Stir in raisins; make a well in the center of mixture.


Combine applesauce and next 4 ingredients in a separate bowl; stir well with a whisk. Add to flour mixture, stirring just until moist.


Spoon the batter into 12 muffin cups coated with cooking spray. Bake at 375° for 18 minutes or until the muffins spring back when touched lightly in the center. Remove muffins from pan immediately and cool on a wire rack.


Amanda's Analysis:

John hasn't been able to try these yet, but I froze half of them to eat when he gets back. I thought these muffins were really tasty! They are a denser muffin but they stay moist with the applesauce. The flavor could be amped up a little bit, maybe by adding more cinnamon. I also thought the addition of some walnuts or even diced apples would be a nice touch, although not necessary. I definitely see myself making these again. This recipe gets 6 spoons.

John's Jibba-Jabba - Back by popular demand! I thought these muffins were great. Although I had them after they had been frozen they still tasted very good. I would really like to try them fresh sometime and see if there is any difference. I really enjoyed the raisins and my only suggestion for the next batch would be to use a few more. I also enjoyed knowing that I was getting more iron in my diet. Did you know that if iron is not adequate in the diet, iron-deficiency can occur which typically causes tiredness, apathy and a tendency to feel cold. Boy oh boy am I glad I got my iron covered. These muffins get 6 spoons.
