Orange Mango Chicken

Mangos have been on sale this week so I decided to whip up something with them. Amanda does not like them as much as I do so I tried to find something that would make her fall in love with the mango. I found this recipe here.


Orange Mango Chicken

Ingredients
3 tablespoons olive oil
4 chicken breasts
1/8 teaspoon thyme
1 lemon, juiced
salt and pepper to taste
1 cup orange juice
1 mango, diced
1/4 teaspoon ginger
1/8 teaspoon cinnamon

Directions
Cook chicken breasts in olive oil in skillet over medium heat for 5-10 minutes on each side. Season both sides with thyme, salt, and pepper. Remove from heat

Heat lemon juice in skillet and scrape brown bits. Mix in orange juice, mango, ginger, and cinnamon. Cook over high heat stirring continuously for 4-5 minutes until thickened. Spoon over chicken to serve.

Amanda's Analysis:
This chicken was pretty tasty. I was a little wary at first because I tend to prefer savory flavors over sweet ones (except for chocolate of course), but I found myself enjoying this dish. Cinnamon is also not a flavor I would normally associate with chicken, but I think it added a nice spice. While not my favorite way to eat chicken, I still enjoyed this dish and would eat it again. I give this dish 5 spoons.


John's Jibba-Jabba:
This recipe turned out great. I must admit that I doubled the spices used and I think it turned out much better than it would have without tweaking. It would have been nice if the flavor became a bit more infused in the chicken but overall it was a quick and easy dish. I give this recipe 6 spoons.
