Chicken Marsala

This recipe I got from one of my favorite websites for finding recipes, allrecipes.com. It's a great site that lets you search recipes, save your favorites in "my recipe box", and read other cook's ratings and comments of the recipe. I modified the recipe posted on allrecipes based on some of the suggestions and I think the outcome was great!





Chicken Marsala




Ingredients
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
1/2/ teaspoon garlic powder
4 boneless, skinless chicken breasts
1 tablespoons butter
3 tablespoons olive oil
2 cups mushrooms
1 cup Marsala wine

Directions
In a shallow bowl, mix together flour, salt, pepper, oregano, and garlic powder. Coat all chicken pieces in flour mixture.

In a large skillet, melt butter in olive oil over medium heat. Place chicken in pan and lightly brown, turning over once.

Add mushrooms and wine. Cover skillet and simmer for 10 minutes or until no longer pink, turning chicken once.

Remove chicken from skillet and add some of the left over flour mixture to pan to thicken sauce.



Amanda's Analysis:
I loved this recipe! It was quick and easy to make and didn't require half an hour of chopping before starting to cook (I hate that). I thought it was flavorful and the chicken stayed moist, and best of all it had mushrooms! The only thing I might try differently next time is using more wine to create more sauce. I give it 7 spoons!

John's Jibba-Jabba:
Yes it was tasty. Yes it was easy. The only thing I did not like about it was the mushrooms. They were everywhere! You could not take a bite without chomping down on one. Although I will say that their taste was not overpowering and their texture was above average. I will give this Marsala 6 mushroom filled spoons.

YEA, Another recipe, I've been waiting. :-) I think I would agree with John and probably too many mushrooms for my taste but I think worth the try. Mom

I think I would agree with Amanda and the mushrooms would make the dish as great as it was. I look forward to trying it... with mushrooms.
