Waffles

Last night I thought waffles sounded really good for dinner, so instead of using a pre-made mix I decided to try and make them from scratch. I got the recipe from allrecipes.com. We had a jar of apple pie filling I got from my mother-in-law that we used to top them. I also doubled the recipe because I wanted extras to freeze for later. However, a double batch made 12 waffles, so we will be eating frozen waffles for quite awhile!




Waffles

Ingredients
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Directions
Beat eggs in large bowl until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla until smooth.
Spray preheated waffle iron with non-stick cooking spray. Pour mixture onto hot iron and cook until golden brown.


Amanda's Analysis:
These were decent waffles and once topped with apple pie filling and maple syrup they definitely hit the spot. However, the waffles by themselves were plain and lacked any flavor. I think I will continue to search for the perfect waffle recipe. I give it 4 spoons.
John's Jibba-Jabba:
Lesson #1 - Do not make a double batch of something until you try the recipe.
Lesson #2 - Be careful how full you fill the waffle iron.
Those waffles get 4 spoons but the lessons learned are priceless.
