Today I made some cookies. I got this recipe from Cookies! A Cookie Lover's Collection, a recipe book I got at a garage sale for $1. I like this recipe book because it has a picture of every cookie! They all looked great but I decided on Peanut Butter Banana Cookies.
Ingredients
3/4 cup packed brown sugar
1/2 cup margarine, softened
1/4 cup chunky peanut butter
1 egg
1/2 teaspoon vanilla
3/4 cup mashed bananas (about 2 small bananas)
3 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
Frosting:
1 cup powdered sugar
1/4 cup margarine, softened
1 oz unsweetened baking chocolate, melted and slightly cooled
1-2 tablespoons milk
Directions
Preheat oven to 350°.
Combine brown sugar, margarine, peanut butter, egg and vanilla and beat at medium speed until light and fluffy. Add bananas and beat at low speed until combined.
Add flour, baking soda and salt and beat at low speed until soft dough forms.
Drop dough by heaping spoonfuls 2 inches apart onto prepared cookie sheets. Bake for 10-12 minutes. Cool completely.
In small bowl combine frosting ingredients. Beat at low speed until smooth. Spread frosting evenly on cookies.
Amanda's Analysis:
I thought these cookies were pretty good. Without the frosting they are a little dry, but the chocolate definitely helps. They taste good and fulfill my chocolate cravings, but probably won't become my favorite cookie any time soon. I give them 5 spoons.
John's Jibba-Jabba:
These little morsels get 4 spoons. I liked the frosting and the cookie's light and fluffy texture. I was a little disappointed though. When I heard peanut butter and banana I expected to be able to taste both peanut butter and bananas. Instead I tasted neither. Oh I am still going to eat my fair share but not as quickly as usual.
