Happy Heart Day

For Valentines Day thursday John and I decided to stay home and cook a meal together. We searched through our cookbooks and decided on Chicken Cordon Bleu and an Apple Crumble for desert. Both were found in the Better Homes and Gardens New Cookbook Bridal Edition that my mom got us as a wedding present. Enjoy.


Chicken Cordon Bleu


Ingredients
boneless, skinless chicken breast
sliced, cooked ham
sliced Swiss cheese
butter or margarine

Directions
Pound chicken breast into a rectangle about 1/8 inch thick.

Place a slice of ham and a slice of Swiss cheese in center of chicken. I also added some thyme. Fold in bottom and sides and roll up chicken. Secure with toothpicks.

Melt butter in a skillet over medium heat. Add chicken and cook for 20-25 minutes or untill no longer pink, turning to brown evenly.

Remove toothpicks and enjoy.



Apple Crumble

Ingredients
5 cups peeled and sliced apples
2 tablespoons granulated sugar
1/2 cup rolled oats
1/2 cup brown sugar
1/4 cup flour
1/4 teaspoon cinnamon
1/4 cup butter or margarine
1/4 cup chopped nuts (I used walnuts)

Directions
Mix apples and granulated sugar. I also added some cinnamon to the apples.

In another bowl combine oats, brown sugar, flour, cinnamon and nuts. Cut in butter until mixture resembles coarse crumbs.

Place apples in 2-quart baking dish and sprinkle topping mixture over top.

Bake at 375° for 30-35 mintues or until toppping is golden brown.

Serve warm with vanilla ice cream for maximum enjoyment.


VERDICT
So we decided to change this section a little bit. After some helpful feedback and discussion we decided we would both rate each dish. We hope this will make the rating scale a little more consistent. Here we go...

Amanda's Analysis:
I thought the Chicken Cordon Bleu was good. It was quick and easy to prepare and didn't require many ingredients. It also has many options as far as sides that would work well with it. The only negative side I can think of is that it didn't have a lot of flavor, but again sides can help with this. I give it 5 spoons.
I love apple pie/crumble/crisp. It is one of my favorite non-chocolate desserts. I thought this was a simple but delicious apple crumble recipe. I think next time I would add a little more brown sugar and let it bake longer. I got too anxious and took it out of the oven before it was completely golden brown. I give this 7 spoons!

John's Jibba-Jabba:
The Chicken was moist but lacked flavor and needed a kick. I had high hopes for this one and came out a little disappointed. Sadly this bird did not fly, 4 spoons.
The apple dessert was scrumptious. The only suggestion I would have is for more cinnamon. Much more cinnamon. This recipe only calls for a hint and for my tastes I would want those apples bathing in it. Regardless, it is an easy and tasty treat, 6 spoons.

Hey I like the individual interpretaion idea. Yes I think you can add more cinnamon to the crumble. I have a recipe and it has at least a tsp in both the apple mixture and the crumble mixture. Mom
