Mint Chip Ice Cream

John and I were craving some ice cream the other week and thought this mint chip ice cream looked like a winner! The recipe was in the recipe book that came with our Cuisinart Ice Cream Maker. Even though it's still pretty chilly here in Chicago, this was a nice treat!

Mint Chip Ice Cream

Ingredients
1 cup milk, well chilled
3/4 cup sugar
2 cups heavy cream, well chilled
2 teaspoons peppermint extract
green food coloring
4 ounces mini chocolate chips

Directions
In a medium bowl, whisk to combine the milk and sugar until the sugar is dissolved, about 1 to 2 minutes. Stir in the heavy cream, peppermint extract and green food coloring until it reaches desired color. Turn machine on, pour mixture into freezer bowl and let mix until thickened, about 30 minutes. Add chocolate chips during the last 5 minutes of mixing.

Amanda's Analysis:
Homemade ice cream is so much better than store bought. This ice cream is creamy and the mint flavor blended well with the sweet chocolate chips. I give this ice cream 7 spoons!

John's Jibba-Jabba:
I love me some ice cream and this homemade mint chip was right up my alley. The ice cream had a very nice smooth texture and bright minty flavor. 7 spoons!
