Blueberry Muffins

I made these to take to work for a coworker's birthday. I secretly love other people's birthdays because it gives me an opportunity to bake! This recipe is slightly adapted from allrecipes.com, and with a name like "To Die For Blueberry Muffins", I knew they had to be good!


Blueberry Muffins


Ingredients
1 1/2 cups flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
~1/3 cup milk
1 cup fresh blueberries
1/4 cup brown sugar
3 Tablespoons flour
2 Tablespoons butter, cubed
1 teaspoon cinnamon

Directions
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder.

Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill greased or lined muffin cups right to the top, and sprinkle with crumb topping mixture.

To Make Crumb Topping: Mix together 1/4 cup sugar, 3 Tablespoons flour, 2 Tablespoons butter, and 1 teaspoon cinnamon. Mix with fork, and sprinkle over muffins before baking.

Bake at 400° for 20-25 minutes or until tester comes out clean.

Amanda's Analysis:
These were absolutely to die for! The sprinkling of brown sugar topping adds just the right amount of sweetness, and fresh blueberries are a must! These would not have been half as tasty with frozen blueberries. My coworkers would not stop saying how much they loved these muffins and they were gone in no time! Needless to say, I will not need to try out any other blueberry muffin recipes. I give these muffins 7 spoons!

John's Jibba- Jabba:
I am all for making bold and outrageous statements but I do not think I would ever die for a muffin. That said, I think if ever a muffin could elicit such a response it would be these. They were exceptional. One thing I do not like are all these co-worker birthdays. Amanda makes all these wonderful treats and all I get is a small sample. I suppose it is better than no sample at all. These muffins get 7 spoons.

These sound good for a Saturday morning. The brown sugar/cinnamon on top give it a nice touch. I like blueberries also.
