Happy New Year!

Welcome to 2009! To celebrate on New Year's Eve, John and I decided to stay home and cook a fun dinner. I found this recipe I had saved and thought it would be a great chance to use the mini food processor I got for Christmas.


Roasted Red Pepper and Basil Pesto Pasta

Ingredients
3 cloves garlic

1/3 cup pine nuts

1/3 cup grated Parmesan cheese

1 cup roasted red bell peppers

1 cup fresh basil leaves

1/2 tsp salt

1/4 tsp pepper

1/3 olive oil
1 lb pasta

1/3 cup heavy cream


Directions
Place garlic and pine nuts in a food processor. Pulse until finely chopped. Add Parmesan, red pepper, basil leaves, salt and pepper. Pulse until well combined. With the motor running, add olive oil through the feed tube and process until incorporated. Set aside.

Cook pasta according to package directions. Drain and return pasta to the pot. Add the pesto to the pasta and stir to combine. Stir in heavy cream and heat until warmed through.

Amanda's Analysis:
I loved this dish! It was a great way to start off 2009. Pesto is something I have been wanting to try to make for awhile and I'm glad I finally got the chance. The red peppers add a lot of flavor and the heavy cream makes it nice and lightly creamy sauce. I will hope to make this again soon! I give this pasta 7 spoons!

John's Jibba-Jabba:

This was really good pasta. I really enjoyed the fresh basil and pine nuts. This is a relatively simple dish that is very appealing to the taste buds. Plus it gives Amanda an excuse to break out the food processor. This dish gets 6 spoons.
