Chicken Pot Pie

This dish is something I had been wanting to try for awhile. Chicken pot pie is something I really like but have never tried to make from scratch. I found this recipe from allrecipes.com but ended up altering it a little after reading others' reviews.


Chicken Pot Pie

Ingredients
1 lb chicken, cubed
1 cup carrots, sliced
1 cup frozen peas
1 cup corn
1/3 cup butter
3/4 cup onion, diced
2 cloves garlic
1/3 cup flour
salt and pepper
2 cups chicken broth
3/4 cup heavy cream
2 (9 inch) pie crusts
1 egg white

Directions
In medium pot, combine chicken and vegetables. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.

In same pot, cook onions and garlic in butter until soft. Stir in flour, salt and pepper. Slowly add chicken broth and cream while stirring. Simmer over medium heat until thickened. Remove from heat.

Place 1 pie crust in bottom of pie pan and brush with egg white. Mix chicken and vegetables with sauce and add to pie crust. Cover with top crust, seal the edges and make several slits on top to allow venting. Cover edges of pie crust with foil to avoid burning.

Bake at 375° for 1 hour or until golden brown. Allow to cool for 10 minutes before serving.

Amanda's Analysis:
I am so glad I made this! It was so much fun to make this from scratch and have it turn out so great (even though I did cheat a little and used pre-made pie crusts). This dish is so much more flavorful than the frozen kind, and I'm sure a little healthier too. I was too excited and didn't let it sit before cutting into the pie, so the filling wasn't quite set up yet. However, this dish was very flavorful and creamy and delicious. I give this potpie 7 spoons!

John's Jibba-Jabba:
This turned out to be a really good dish and much better than any store bought pot pie I have ever had. I think it was the fresh crust that really put this one over the top. My only comment would be that I would prefer more chicken so I would double that amount next time. I would also like to try it with some broccoli inside as well. I give this precious pie 7 spoons.

OOOHHH I just saw a recipe in Real Simple of Pot Pie and thought that would be fun to try. I think I'll try your recipe instead. I'm hungry.
