Veggie Pizza

I made this recipe for my work's holiday potluck. It was a hit and everyone loved it, and I even had some left over for John to enjoy. The recipe comes from allrecipes.com.

Veggie Pizza

Ingredients
2 (8oz) packages refrigerated crescent rolls
2 (8oz) packages cream cheese, softened (I used Neufchatel cheese)
1 cup mayonnaise

1 (1oz) package dry ranch dressing mix
1 cup broccoli, chopped
1 cup cauliflower, chopped
1 cup green pepper, chopped
1 cup carrot, shredded (I used only 1/2 cup)

Directions
Roll out crescent roll dough onto jelly roll pan. Pinch together seams and perforations to from one crust.

Bake crust at 375°about 12 minutes or until lightly golden. Remove crust from oven and allow to cool for about 15 minutes.

Combine the cream cheese, mayonnaise, and ranch dressing mix. Spread mixture over cooled crust. (I didn't quite use all the mixture and still had a fairly thick layer). Arrange vegetables over the cream cheese layer. Chill for 1 hour. Slice and serve.

Amanda's Analysis:
I love this vegetable pizza! It is quick and easy to make and tastes great! It's great as an appetizer or snack food, especially around the holidays. You can use any vegetables you like. I think radishes would be a tasty addition, and would add some nice color too! The only think I would change is to use less of the dry ranch dressing mix. It was a little too overpowering. I think using about 3/4 of the package would be enough. Despite this bold flavor, I give this pizza 7 spoons!


John's Jibba-Jabba:
I enjoy both vegetables and pizza so this recipe was right up my alley. The only change I would make would be using more vegetables and less of the cream cheese and ranch mixture. At times this mixture overpowered the vegetables that are meant to be the star of the show. I give this pizza 6 spoons.
