The other day, John and I found ourselves watching this years Pillsbury Bake-Off on The Food Network. The Pillsbury Bake-Off is an annual contest where 100 amateur chefs (mostly moms) compete in several different categories where they must use a certain amount of Pillsbury food products. The winner this year was a recipe for Double-Delight Peanut Butter Cookies, and of course we had to try them out.
Double-Delight Peanut Butter Cookies
Ingredients
1/4 cup dry roasted peanuts, finely chopped
1/4 cup granulated sugar
1/2 teaspoon cinnamon
1/2 cup creamy peanut butter
1/2 cup powdered sugar
1 roll (16.5 oz) Pillsbury Create 'n Bake refrigerated peanut butter cookies, well chilled
Directions
In a small bowl mix chopped peanuts, granulated sugar and cinnamon.
In another bowl stir peanut butter and powdered sugar until completely blended. Shape mixture into 24 one-inch balls.
Cut roll of cookie dough into 12 slices. Cut each slice in half crosswise to make 24 pieces. Flatten each piece slightly. Shape 1 cookie dough piece around 1 peanut butter mixture, covering completely. Repeat with remaining dough.
Roll each covered ball in the peanut mixture. Place on an ungreased cookie sheet and flatten with the bottom of a glass sprayed with vegetable spray (I used a fork). Sprinkle any remaining peanut mixture on top of cookies.
Bake 7-9 minutes or until golden brown. Let cool and enjoy!
Amanda's Analysis:
I thought these tasted pretty good, but they were no fun to make! I think changing several things would have made them easier. First, I would have put the peanut butter cookie dough into the freezer for 10 minutes or so before to make them more firm and less sticky. I also would have added more powdered sugar to make more of a dough, because again mine was very sticky. Third, I would have chopped the peanuts much finer. I chopped mine pretty well but they didn't mix evenly with the sugar and weren't evenly rolled onto the cookies. Aside from the amount of trouble I had making these, they were pretty tasty and very rich! Definitely make sure to have a glass of milk ready! Due to how little I enjoyed making this, I give them 4 spoons. Had they been much easier and less messy to make, I think they are worth 5 spoons.
John's Jibba-Jabba:
These did taste very good, but it was no fun to clean up the mess. If you are a peanut butter fan then you will love these guys. I enjoyed them but all I could think about was how one could incorporate chocolate into the recipe. I think if you made a chocolate cookie with peanut butter filling or a peanut butter cookie with a chocolate filling they would be even better. Still this is an interesting recipe that results in soft cookies. I give them 5 spoons.

Ooooooooohhh, I think Kyle and I would love these. Dad is not a peanut butter fan and I like John's idea of trying to figure out how to incorporate chocolate into them. Looks like another recipe I'll have to try.
