Birthday Surprise

Last week was John's birthday. Because we had so much going on the past couple of weeks and I knew we'd never eat a whole cake, I decided to make him cupcakes. I got this recipe from allrecipes.com and thought they would be perfect to help celebrate John's big day.


Chocolate Surprise Cupcakes

Ingredients
3 cups all-purpose flour

2 cups white sugar

1/2 cup unsweetened cocoa powder

1 teaspoon salt

2 teaspoons baking soda

2/3 cup vegetable oil

2 cups water

2 tablespoons vinegar

2 teaspoons vanilla extract

1 (8 ounce) package cream cheese, softened

1 egg

1/2 cup white sugar

1/4 teaspoon salt

1 cup semisweet chocolate chips


Directions
In a large bowl, mix together flour, 2 cups sugar, cocoa, 1 teaspoon salt and baking soda. Stir in oil, water, vinegar and vanilla until blended. Pour mixture into prepared muffin cups, filling each 2/3 full.

In a medium bowl, beat together the cream cheese, egg, 1/2 cup sugar and 1/4 teaspoon salt until light and fluffy. Stir in chocolate chips. Drop a heaping teaspoonful of the cream cheese mixture into each cupcake.

Bake at 350° for 25 minutes. Allow to cool and enjoy!

Note: These can also be made by filling the lined muffin cup 1/3 of the way with cake mixture, adding a teaspoon of cream cheese mixture, and filling to 2/3 full with cake mixture. This really makes for a "surprise" cupcake!


Amanda's Analysis:

I thought these cupcakes were very quick and easy to make. I made some both with the cream cheese on top and in the middle, and while the cupcakes with it on top looked much better I think I preferred having the cream cheese in the center. These cupcakes are sweet and moist enough that they don't need any frosting. However I think a light frosting could be added and it wouldn't bee too much. Overall I think these were delicious and a nice change from your everyday cupcake. I give them 6 spoons.

John's Jibba-Jabba:
I generally enjoy cupcakes. Not as much as Amanda but as much as the average person. What usually bothers me about them is that they dry out quickly and crumble when you take them out of the wrapper. Amazingly these cupcakes did not suffer from these common cupcake shortfalls. They had a fantastic chocolate flavor and were very moist several days after baking. I give these little cakes in a cup 7 spoons.

I made these cupcakes last week and tried to hide the cream cheese in the middle. It work great, but beware of the hole! The cream cheese bubbled-up and made a little cavern inside this delicious treat. They still tasted wonderful. Thanks for the recipe!
