This recipe I adapted from several recipes I found on the internet. It was very quick and easy. Now that my brother is living in his first apartment and having to cook for himself, I think this would be a great recipe for him to try.
Salsa Chicken
Ingredients
2 chicken breasts
1/8 teaspoon paprika
1/8 teaspoon chili powder
1/8 teaspoon garlic powder
1 1/2 cup salsa
3/4 cup cheddar cheese
Directions
Combine paprika, chili powder and garlic powder in a shallow bowl. Coat both sides of chicken with seasonings.
Place seasoned chicken breasts in a greased glass baking dish. Cover chicken with salsa.
Bake for 30 minutes at 375ยบ, or until chicken is completely cooked and juices run clear. When chicken has 5 minutes left to cook, top with cheese and finish cooking.
Amanda's Analysis:
This recipe was great! It only took 5 minutes to have the chicken in the oven and tasted great when it was done. I made sure to completely coat both sides of the chicken with the spice rub so it had plenty of flavor. It was very tender and not dry at all. Another plus was it worked great for left-overs. The left over chicken is good on it's own, or I also shredded some and used it to make tacos. I will definitely make this again, I give this salsa chicken 7 spoons!
John's Jibba-Jabba:
This was a really good dish and did not take very long to make. I would like to try it with some different and more interesting salsa in the future. I think a mango salsa would be especially good in this application. This one gets 6 spoons.
