No Bake Cookies

I ran into this recipe on allrecipes.com and immediately knew I had to make them. We had these for school lunches growing up, but they called them No Bake Cookies. They were one of my favorites then, and they are just as good now! Enjoy!

No Bake Cookies

Ingredients
1/2 cup shortening
(I followed others suggestion and used 3/4 cup margarine instead)
1/2 cup milk

2 cups sugar

1/2 cup coconut

3 cups rolled oats
1/2 cup unsweetened cocoa powder


Directions

In saucepan over medium heat, combine margarine, milk and sugar. Stirring constantly, bring to a boil. Continue to let boil for 2 minutes.

Remove from heat. Add coconut, oats and cocoa and mix well.
Drop by full teaspoons onto wax paper lined cookie sheets. Place in refrigerator to cool and set.

Amanda's Analysis: These were delicious! They were just as I remembered them growing up! They were also super easy and quick to make. They are somewhat rich, so the smaller cookie size is nice. I think it would be fun to make shaped cookies using small cookie cutters. I give these cookies 7 spoons!

John's Jibba-Jabba: Simple, easy, and delicious. These little treats took me back to a simpler time when chocolate milk on Friday was one of the highlights of my week. I do not think the cookies from school has this much coconut but I welcomed the addition. I was glad I didn't forget my 20-day lunch ticket on the day Amanda made these. They get 7 spoons!

Oooh 7 spoons. Is this the first time John? Do you have any punches left on your 20 day ticket? I didn't realize these had coconut in them. Our cookie jar is empty at the moment. Maybe I should give these a try. :-) Mom
