Banana Chocolate Chip Pancakes

I've recently been trying to eat more healthy, so I checked out a few healthier cookbooks from the library. This recipe comes from Weight Watchers' Make It In Minutes.


Banana Chocolate Chip Pancakes

Ingredients
1 1/2 cups flour

1 Tablespoon sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/8 teaspoon ground ginger

2 ripe bananas, mashed
1 cup milk

1 large egg, lightly beaten

1 teaspoon vanilla

1/4 cup chocolate chips


Directions

Combine flour, sugar, baking powder, salt and ginger in a large bowl. In a separate bowl, combine bananas, milk, egg and vanilla. Stir the dry ingredients into the wet ingredients until smooth. Gently fold in the chocolate chips. Let the batter stand at room temperature for 10-15 minutes.


Preheat a nonstick griddle over medium heat. Using a scant 1/4 cup for each pancake, pour the batter onto the pan. Cook until the tops are covered with bubbles and the edges are browned, 2-3 minutes. Flip and cook until other side is browned, about 2 minutes.

Amanda's Analysis:

These were pretty good pancakes. The banana flavor definitely came through but wasn't too overpowering. I also am a big fan of adding chocolate chips to pancakes. My biggest complaint is that these were pretty dense due to using the bananas. While I prefer waffles to pancakes, I like my pancakes fluffier. I like that these have a good amount of protein. The cookbook includes the nutritional information, and a serving of three pancakes has 334 calories, 10 grams of protein and 3 grams of fiber. I give these pancakes 5 spoons.


John's Jibba-Jabba:

Banana pancakes make me feel so mellow. See this Jack Johnson video and you will know what I mean. Overall these pancakes were tasty although I would have liked a bit more of the banana flavor to come through. It would also been nice to use a bit more ginger and perhaps some cinnamon as well. These mellow cakes get 5 spoons.
