We've been trying to eat more vegetables lately so I have been looking for some new ways to cook them. John loves carrots and I found this recipe so I thought we would give it a shot.
Ingredients
3 cups sliced carrots
3 Tablespoons butter
1/2 teaspoon corn starch
2 Tablespoons honey
Directions
Bring a large pot of salted water to boil and add carrots. Cook until tender crisp, drain and set aside.
In a saucepan, melt butter and stir in corn starch. Add carrots and stir in honey. Cook over medium heat, stirring occasionally, until heated through and carrots are done to your likeness.
Amanda's Analysis: I thought these were delicious! They tasted like the glazed carrots we used to get at high school, except not as mushy. (and yes, I actually did like the carrots at school, just not the mushy-ness) The honey adds a nice sweetness and a little bit of an unexpected flavor. These were quick to make and would be a great side dish to a nice steak. I definitely see myself making these again. I give them 6 spoons.
John's Jibba-Jabba:
I thought these carrots were tasty. I hated the glazed carrots we got in school so I was weary of this recipe. Overall I tend to enjoy raw vegetables more than cooked vegetables but I enjoyed these carrots because they did not get overly mushy. I also liked how the glaze complemented the carrots and did not overpower them. I give these carrots 5 stars.

I will have to try these glazed carrots. Dad gets tired of just plain cooked carrots. I'm not a big honey person so it will be interesting for me but Dad LOVES Honey.
