We had some beef that been butchered to "fajita style" from John's parents and wanted to find a way to cook it. I found this recipe on allrecipes.com and thought it sounded delicious. Bonus was that we had all the ingredients on hand.
Pepper Steak
2 Tablespoons olive oil
1 medium onion, chopped
2 green bell peppers, sliced into strips
2 cloves garlic, minced
1/3 cup soy sauce
1/3 cup honey
1/3 cup red wine vinegar
1 1/2 pounds flank steak, cut into thin strips
Directions
Heat olive oil in skillet over medium heat. Add onion, peppers and garlic and cook until tender-crisp, stirring frequently. Set aside.
In same skillet add soy sauce, honey and red wine vinegar. Add beef and cook, stirring frequently until done, about 10-15 minutes. Stir in cooked vegetables and cook another 10-15 minutes.
Serve with rice.
Amanda's Analysis:
We are on a roll in 2009! This was another great dish. This recipe was easy to make and delicious to eat. The sauce had a lot of flavor and this recipe made enough to help flavor the rice. I think next time I would add more vegetables, such as sugar snap peas, green beans, broccoli or even more peppers. Overall this dish was tasty and I give it 6 spoons.
John's Jibba-Jabba:
This was a good recipe that was fairly easy to make. Next time I would like to try some different peppers and/or broccoli. You may be asking why I am on such a broccoli kick recently. It is because I recently learned that broccoli is a 100 point food. What is a 100 point food you ask? Check out this link and find out. Oh yeah, I give this dish 6 spoons.
