Cookies!

Time to try another cookie recipe from my $1 garage sale cookie recipe book. This time I chose Chunky Macadamia Chip Cookies. Even though I am a huge chocolate fan, I like to change it up every once in a while and these sounded delicious!

Chunky Macadamia Chip Cookies

Ingredients
1 cup brown sugar

1/2 cup granulated sugar

1/2 butter or margarine, softened

2 eggs

1 1/2 teaspoons vanilla

3 cups flour
1 cup flaked coconut

1 teaspoon baking soda

1/4 teaspoon salt

3/4 cup coarsely chopped macadamia nuts

1/2 cup white chocolate chips

1/2 cup semi-sweet chocolate chips


Directions
Combine sugars, butter, shortening, eggs and vanilla. Beat at medium speed until light and fluffy.


Add flour, coconut, baking soda and salt. Beat at low speed until soft dough forms.


Stir in nuts and chocolate chips.
Drop dough by heaping teaspoons onto cookie sheets.

Bake for 11-13 minutes or until golden brown.


Amanda's Analysis:

I thought these were great! I was a little nervous about the coconut being too overpowering, but it was very subtle. They didn't flatten out very much when baking, so next time I may use more butter and less shortening. They won't give me my chocolate fix, but they weren't too dry and overall very delicious! I give them 7 spoons!

John's Jibba-Jabba:

These little cookies were superb. They were just a touch dry for my liking but everything else was great. I must say that I wish Amanda had a bigger cookie scooper. All the cookies she makes are really small and I have to eat like 50 of them to get full. This has nothing to do with this recipe but I thought I needed to throw it out there. These cookies get 6 spoons.

I had to laugh John as I think Kevin suffers from the same small cookie scooper syndrome. I have heard that comment from him before too. :-) I was surprised to see the coconut in there but I'll have to try these before passing them up. Some cookies that don't flatten out Amanda I have had to slighlty flatten with the palm of my hand before baking.
